Evolution has made these crustaceans of the sea quite hardy along the rocky coastal areas of the world. And, their journey is not much different than the business world. Lobsters, while a profitable commodity, enjoy an interesting grading depending on the make-up of their shell that creates an elegant analogy for business lifestyles.

Young lobsters, like start-ups, have a weak shell due to molting for growth. These “new shell” lobsters yield the best meat-to-shell ratio, but the small amount of protection will make it sour before it even leaves the fish mongers shack at the shore. The “old shell” lobster is just the opposite. Its long maturity ensures a tough shell and a nice balance of meat-to-shell ratio. It makes the old shell lobster heartier than its younger companions and can last for travel around the nation – much like an established enterprise with a diversified supply chain. These old shell lobsters, like their business counterparts, enjoy healthy profits and consistent demand.

So, what about the lobster in the middle? The “hard shell” lobsters are the prime target of chefs and fisherman alike. They maintain a sweet meat balance of their younger, but with a shell to maintain transport to regional restaurants and grocers. However, due to their inability to last longer, they’re relegated to keeping their reach regional. While this is fine during the good times, it limits their ability to stay in demand during the hard times.

Mid-size businesses also have a similar problem. While tough times may be beneficial to the lifespan on the lobster, mid-size businesses have quite the opposite. Tougher times disproportionately affect mid-size business harder than their more established counterparts. When the economy slows down, its these companies that suffer the most, and mainly with cash-flow.

Celebrating Lobsters

Lobster Rolls

INGREDIENTS

  • 1 lb. Cooked lobster meat, torn into large chunks (My husband is from Boston, so we have his family mail us live “lobstahs”, so sad when we throw them into the pot)
  • 1/4 cup Cilantro
  • 1/4 cup Mayonnaise (I’m allergic to eggs so I use salted butter instead)
  • 2 tsp. Lemon Juice
  • Salt and Pepper to taste
  • 1 Ripe, Fresh California Avocado, peeled, seeded and cut into large dice (3/4″)
  • 4 Bun of choice (It tastes great on a Hawaiian Hot Dog Bun toasted with a melted butter)

INSTRUCTIONS

  1. Mix the first four ingredients together in a large bowl.
  2. Add salt and pepper to taste.
  3. Toast the buns on both sides until golden.
  4. Divide the lobster mixture among the four buns. Top each with ΒΌ of the diced avocado. Serve immediately.
  5. If top-split buns are not available, use your favorite sandwich roll or serve with lettuce leaves for wrapping.
